Roast Veggie Salad!

Hi guys!

I’ve been a bit lazy but never fear I am back and blogging again!

I just wanted to share with you this awesome salad that my PT told me about that is yumo!

Basically just roast a bunch of veggies then add feta and balsamic vinegar!


  • Legit anything you can find. Below is what I used. Its all I had in my fridge at the time. Next time I will probably add zucchini and eggplant.


  1. Step 1

    Preheat oven to 200°C. Line a large baking tray with non-stick baking paper (I didn’t do this and I should have as the veggies stuck to the tray a little bit!)

  2. Step 2

    Cut all your veggies up and place on baking tray (do not use oil). 

  3. Step 3

    Season veggies with salad and pepper and roast for 35-45 minutes (or until brown).

  4. Step 4

    Place vegetables into a bowl and add feta cheese. Dress the salad with balsamic vinegar.


And Voila!! You are done, a yummy, guilt-free salad :)
